Baked Pork Chops with Honeycrisp Apples, Carrots & Spinach

One-dish comfort baked in a Pyrex

🧂 Ingredients

  • 2–4 pork chops (bone-in or boneless)
  • 2 Honeycrisp apples, sliced
  • 3–4 carrots, peeled and cut into sticks or coins
  • 1 small onion, sliced (optional)
  • 2 cups fresh spinach (added near end of baking)
  • 2 tbsp olive oil or melted butter
  • 1 tbsp Dijon mustard (optional)
  • 2 tsp apple cider vinegar or lemon juice
  • 1–2 tsp fresh thyme or ½ tsp dried thyme
  • Salt and pepper to taste
  • Optional: drizzle of honey or maple syrup

⚙️ Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a Pyrex baking dish.
  2. Season pork chops with salt, pepper, and half the thyme. Set aside.
  3. Toss carrots, apples, and onion with olive oil, vinegar, remaining thyme, and optional honey or mustard.
  4. Layer the dish: Spread fruit and veggie mixture in the bottom of the Pyrex. Nestle pork chops on top or between.
  5. Bake uncovered for 35–40 minutes, or until pork reaches 145°F internal temperature.
  6. In final 5–10 minutes, add spinach by tucking it gently into the juices and under pork to wilt.
  7. Optional: Broil for 2–3 minutes at the end for caramelization on top.
  8. Rest for 5 minutes before serving.
