Baked Pork Chops with Honeycrisp Apples, Carrots & Spinach
One-dish comfort baked in a Pyrex
🧂 Ingredients
- 2–4 pork chops (bone-in or boneless)
- 2 Honeycrisp apples, sliced
- 3–4 carrots, peeled and cut into sticks or coins
- 1 small onion, sliced (optional)
- 2 cups fresh spinach (added near end of baking)
- 2 tbsp olive oil or melted butter
- 1 tbsp Dijon mustard (optional)
- 2 tsp apple cider vinegar or lemon juice
- 1–2 tsp fresh thyme or ½ tsp dried thyme
- Salt and pepper to taste
- Optional: drizzle of honey or maple syrup
⚙️ Instructions
- Preheat oven to 375°F (190°C) and lightly grease a Pyrex baking dish.
- Season pork chops with salt, pepper, and half the thyme. Set aside.
- Toss carrots, apples, and onion with olive oil, vinegar, remaining thyme, and optional honey or mustard.
- Layer the dish: Spread fruit and veggie mixture in the bottom of the Pyrex. Nestle pork chops on top or between.
- Bake uncovered for 35–40 minutes, or until pork reaches 145°F internal temperature.
- In final 5–10 minutes, add spinach by tucking it gently into the juices and under pork to wilt.
- Optional: Broil for 2–3 minutes at the end for caramelization on top.
- Rest for 5 minutes before serving.
